February 18th is President’s Day so enjoy this salad. If you like salmon, this is a great recipe and is so easy to make. If you make this salmon loaf and salad, let me know if you enjoyed. I hope you have good health and many happy days in 2013!.

George Washington Salad

Salad:
2 small boxes cherry Jello
2 cups boiling water
1 No. 2 can crushed pineapple
1 can cherry pie filling

Mix the boxes of Jello in the boiling water and add pineapple (with juice) and pie filling. Let set, then add the topping.

Topping:
1 (8 oz) pkg cream cheese
16 oz sour cream
1/2 cup confectioners’ sugar
1 tsp vanilla
1/2 cup chopped nuts

Blend all ingredients, except nuts, well. Pour this topping over the Jello mix and then cover with the chopped nuts. Keep refrigerated.


Family Salmon Loaf

2 tbsp butter
2 tbsp all-purpose flour
2 cups milk
1 cup mild grated cheese
1/3 cup bell pepper, finely chopped
Salt and pepper, to taste
2 eggs
1 lb can salmon
1/2 cup onion, finely chopped (optional)

Mix butter, flour and milk to make a cream sauce. Add cheese, bell pepper and season with salt and pepper to taste. Mix eggs with salmon. In a buttered casserole dish, place layer of salmon, layer of sauce, layer of crackers, etc. Bake until bubbly and slightly browned in a 350° oven for 25 – 30 minutes.

  1. My grandmother use to make “The George Washington Salad” for the Thanksgiving/Christmas holidays. Only she would use a can of Strawberry Thank You Pie Filling. This receipe brought back fond memories.
